Anyone who knows me well, knows that Friday night is pizza night. I am not above doctoring up an Aldi's pizza when I'm crunched for time. I do love to make the dough from scratch if I have a couple of hours before dinner. Really, this is so easy, especially with stand mixer which is what I use. It's only about 15 minutes of hands-on time and then you get to add whatever toppings you can dream up. You can even make it advance and freeze the dough until you are ready to bake. This one in the picture is a bbq pork with a hoisin sauce and pickled peppers. I've done a breakfast pizza, four cheese, meat galore, garden veggie, and hot wing pies before. Let your imagination run wild. I use whole wheat flour for the whole thing but you can mix that up to. Half whole wheat, half white, ok. All white, yep. Gluten-free? These are really only 20 minutes of hands on time but the 10-30 minute rise time makes them perfect for making before you start dinner. We rarely post recipes of non-farm items but these are too good to keep to ourselves. This may become a holiday tradition.

Beets are such a gorgeous spring and fall crop. They are hard to resist at the farm stand. I often get asked what to do with them and if the greens are good to eat. This recipe answers both. The greens are amazing on their own or used in place of spinach. The beets are thinly sliced and used as the "noodles" in this lasagna making it great for those in your life that can't have gluten. It also is great for those who have never had beets.
