Eggplant Fries

Eggplant is one under used veggie in my opinion.  It comes in all shades of white and purple and can be used as a meat substitute if you are limiting you meat intake. This recipe is more of a technique you could use with squash, green tomatoes, or eggplant.  If you love fried food, this is also for you.  The best part is that it is not fried!!!

Lemon Rosemary Rabbit

This recipe was suggested by my dear friend and fellow rabbiteer, Jo Taylor.  We made several alterations to the original recipe including made it a crockpot meal.  It was so worth it!  I love how amazing the meat is despite the really simple ingredients and almost no hands-on time.  If you've thought about trying rabbit, this is the recipe I would suggest you start with.

Holy Guacamole!

My associate pastor, Matt Parker, is moving to pastor his own church and I was asked to make one of his favorite dishes for the going away party: Guacamole!  I made a gallon of my guac for him.  I was asked by several people for the recipe.  Here it is!  Just a warning: Pace yourself, people!  This stuff is so good!  Don't start with making a gallon because you will eat it all!  Start with this recipe for 6 people...if you are willing to share.

This dip is a hit at gatherings and super easy to make.  With only five ingredients, you can have this ready in no time.  Which is good because it will not last long. I'm sorry about the picture.  I forgot to take a picture when I first set it out and this was all that was left after Vendy's birthday party.

Better than Football Dressing

When you want a simple salad of fresh vegetables to really pop, this is your dressing.  You can use simple greens, strawberry and feta, or chopped veggies.  This also makes a great marinade for grilled chicken. It is so simple but tastes like you spent a fortune on it.  It's also great in a grain bowl.

This recipe was adapted from adventuresincooking.com.  That website is just amazing.  Her photography is stunning and recipes really rich.  I hope you will check it out.  I've made a few small tweaks to fit my tastes.  I also highly recommend buying your rabbits locally.  Wink, wink.

This is a wonderful crockpot ready meal that works equally well for guests.  Use it in any Mexican food application like tacos, burritos, or nachos.  It also makes a great pizza topping.  You can mix it with barbecue sauce on the second day to make sandwiches.  This is a must-have in your meal rotation.

This is my holiday offering at every covered dish.  The recipe makes two pies so you are prepared for two events.  It's also pretty impressive with a little whipped cream foamed on top.  You can also use your own pumpkin puree instead of canned.
